Adjust Servings:
30 large Cherry tomatoes cherub, or grape tomatoes, preferably in different colors
6 , 4- to 6- inch Bamboo skewers soaked in warm water for 1 hour
1/2 cup Extra-virgin olive oil
3/4 teaspoon Sea salt plus more if needed
1/2 teaspoon freshly Ground black pepper plus more if needed
1/2 cup coarsely chopped fresh Basil
1 tablespoon minced Garlic

    This is a quick and easy recipe to make use of fresh tomatoes. You simply have to grill them, cut side down, and season them with olive oil, salt, peppers, and basil for a bit of tingly taste. It is worth trying and could be served as a side dish during BBQ summer nights.

    Preheat a grill to medium-high.

    Skewer 4 or 5 tomatoes onto each skewer and drizzle some of the olive oil lightly. Sprinkle the tomatoes with 1 ⁄2 teaspoon of sea salt and 1 /4 teaspoon of pepper.

    Grill the tomatoes briefly for 3 to 4 minutes while turning them occasionally until they are warmed through and barely marked by the grill.

    Put the tomato skewers on a serving platter.

    In a small mixing bowl, combine the remaining olive oil with the basil and garlic.

    Season with the remaining 1 / 4 teaspoon salt and 1 / 4 teaspoon pepper, and stir to blend.

    Add the mixture evenly over the tomatoes, and sprinkle with additional sea salt and pepper if desired, and sprinkle some thinly cut basil.

    Serve warm or at room temperature, and enjoy!
