14 oz Tomato
1/4 Red onion chopped
1 Green chilli deseeded and chopped
1 dash Tabasco sauce
2 Lime juice juice of 2 limes
2 tablespoons fresh Coriander roughly chopped

    Another spicy Mexican classic. An ideal accompaniment to guacamole, best served with tortilla chips, and a superb starter for meat and poultry dishes.

    Make an X on the bottom of your tomatoes then throw them into a pot of boiling water for a minute. Fish them out with a slotted spoon, then plunge them into a bowl of cold water. The skins should simply peel off with little effort.

    Cut out the small hard area at the top of each tomato where it was joined to the vine.

    Chop and mash the tomatoes, and sieve away any excess clear liquid

    In a bowl combine the tomato pulp with the onion, chilli, Tabasco and lime juice and stir well.

    Refrigerate the mixture for at least one hour, and just before serving stir in the coriander.
