Directions
Tasty Italian piadina stuffed with ham, cheese, and vegetables, made from wheat flour, lard (often replaced by olive oil), salt, and water. In the past, it was called “the bread of the poor.” It is traditionally cooked on the stove, on a terracotta dish (teggia), a metal or stone plate

Steps
1 Done | In a bowl, combine all the ingredients: flour, oil, baking soda, and lukewarm salted water (as needed). |
2 Done | Knead the dough well until a firm, elastic, smooth, and homogeneous ball is obtained (usually, it must be worked for at least 10 minutes for a good result). |
3 Done | Lift the ball of dough and flour the sides of the bowl before placing it so that it does not stick. |
4 Done | Let stand for 30 minutes, covered with a clean cloth. |
5 Done | Divide the dough into 4 balls and place them on the work surface. With a rolling pin, create discs about 25 cm in diameter and 3 - 4 mm thick. |
6 Done | When the discs are ready, heat a non-stick pan or a plancha or cast iron pan and cook for about 10 minutes: it cooks very quickly, so you have to be careful to turn it often so that it is well cooked on both sides. |
