- 2 Rib roast with bones
- 1 teaspoon Salt
- 1 teaspoon Black pepper
- 4 Garlic cloves
- 1/4 teaspoon dried Thyme
- 1/4 teaspoon dried Rosemary
- 1/4 teaspoon dried Oregano
- 1/4 cup Butter
- 1 tablespoon Olive oil
Grilling rib roasts with garlic herb butter over indirect heat is easy and straightforward. It takes less than an hour to be prepared, but over 3 hours to cook. The result is totally worthy, tender and rich beef ribs. It is a perfect meal for a Sunday gathering at home with friends, this recipe can serve up to 9 people.

Build a wood fire for indirect cooking.
On an aluminium foil, mix the garlic cloves, thyme, rosemary, and oregano. Spill the olive oil over them.
Tightly wrap the foil, and let it grill on the void side of the grill for 45 minutes at 250°F.
Remove the foil from the grill, carefully open it and let it cool.
Into a small bowl, squeeze the garlic cloves and mix it with the cooked herbs, to have a paste.
Add the softened butter.
Place the mixture on a plastic wrap and roll it into a small log. Refrigerate the mixture until it’s well firm, which can take a few days.
Once firm, cut small slits from the opposite side of the bones.
Cut the garlic herb butter into pats and insert into each slit.
Season the rib roast evenly with the salt and pepper.
Meanwhile, grill the rib roast on the void side of the grill for about 2 hours. Place the bone side down.
Let the roast rest for 20 minutes.
Cut into thick steaks, and serve.
