1 medium Avocado peeled and pitted
2 pounds Skirt Steak
Olive oil
1/4 cup Sour cream
1/4 cup chopped fresh Dill weed
2 tablespoons Lime juice
2 teaspoons minced Jalapeño chile pepper
1 teaspoon minced Garlic
1/2 teaspoon Kosher salt
2 teaspoons Kosher salt
1 teaspoon Dry mustard
1 teaspoon chipotle Chipotle chile powder
1/2 teaspoon Ground black pepper
1/2 teaspoon ground Coriander
1/2 teaspoon ground Cumin

    For the avocado dipping sauce, cut about 3 inches from the cucumber and coarsely chop. Blend your chopped cucumber and add avocado, sour cream, dill weed, lime juice, jalapeño, garlic, and the ½ teaspoon salt. Puree until smooth.

    Pour the mixture into a bowl; cover and chill until ready to use.

    For the steak rub, mix 2 teaspoons salt, the dry mustard, chipotle chile powder, black pepper, coriander, and cumin; set aside.

    Lightly graze steaks with oil and season with rub. Let stand at room temperature for 30 minutes.

    place steak on a grill rack directly over high heat for about 4 to 6 minutes for medium rare (145°F), turning once.

    Remove steak from the grill and let it rest for 5 minutes to absorb the juices .

    Thinly slice steak and serve with avocado dipping sauce.
