1 Scallions
3 Garlic cloves
1 piece fresh Ginger walnut-sized
1/2 recipe Caribbean spice mixture
2 tbs Soy sauce
3 tbs Lemon juice
2 tsp Cane sugar or sugar in the row
Salt
Freshly Ground pepper
4 Pork loin steaks

    Delicious spicy pork stick served alongside seasoned rice and tortilla chips as side dishes, to serve with fruity or semi-dry red wine.

    Clean scallion, rinse and chop coarsely.

    Peel garlic and chop coarsely.

    Clean chili peppers, cut in half lengthwise, remove seeds, rinse and cut into strips.

    Peel ginger and chop coarsely.

    Combine onion, garlic, chili peppers, spice mixture, soy sauce, lemon juice, cane sugar, salt and pepper in a blender and process into a thick seasoning sauce.

    Pat steaks dry, pound somewhat flat and brush with sauce.

    Marinate in the refrigerator for 4 hours.

    Drain meat, being careful to save the sauce.

    Grill 12 minutes, turning occasionally and brushing with seasoning sauce.
