Ingredients
- 6 Chicken leg quarters
- 1 cup Olive oil
- 1/2 cup Lemon juice
- 1 teaspoon minced Garlic
- 1.75 Saltteaspoons
- 1 teaspoon Black pepper
- 3/4 teaspoon Cayenne pepper
- 6 teaspoons chopped Parsley
- 2 teaspoons chopped Basil
- 2 teaspoons chopped Oregano
- 2 teaspoons chopped Cilantro

Smoked Leg Quarters are so easy and straightforward to cook, they take less than two hours to cook, so that you won’t waste an entire day in the kitchen. It will be an absolute delight for you and your guests, especially that this recipe can serve up to 6 people.
Use a reusable plastic bag since it is more practical and non-reactive. Just make sure to squeeze the air out of it and to close it tightly.

Steps
1 Done | Build a wood fire for indirect cooking at 300°F. |
2 Done | Meanwhile, well mix and stir all the marinade ingredients together in a bowl. |
3 Done | Keep aside ½ cup of the marinade for basting later and transfer the remaining quantity into a deep dish. |
4 Done | Add the chicken and turn to coat. |
5 Done | Cover the dish and let the chicken marinate in the refrigerator for at least 8 hours. |
6 Done | When the grill reaches 300°F, place the chicken on it and cook for 45 minutes. |
7 Done | Rotate the chicken, baste with the reserved marinade over it, and cook for another 45 minutes. |
8 Done | Let the chicken rest for 15 minutes before serving. |
