Ingredients

Adjust Servings:
2 whole boneless and skinless Chicken breasts For The Chicken :
3 tablespoons Honey
4 tablespoons Oil
1/2 teaspoon ground Coriander
1/4 teaspoon Cayenne pepper
4 tablespoons squeezed Lemon juice or lime juice
2 tablespoons Soy sauce
Freshly Ground black pepper
2 cups Coconut milk For The Peanut Sauce :
1 teaspoon Red pepper flakes
1/2 teaspoon Caraway seeds
1/2 teaspoon ground Ginger
1/2 teaspoon ground Coriander
4 Garlic cloves crushed
1/4 teaspoon Salt
1/4 cup Peanut butter
1/4 cup Peanuts chopped finely, for garnish

Skewered Chicken with Satay sauce

    Southeast Asian cuisine, from which this recipe is inspired, includes a large number of easily prepared yet aromatic dishes. These plates often feature flavors of citrus and herbs such as lime, coriander, caraway, cayenne pepper, and basil.

    In a big bowl, whisk together the honey, oil, coriander, cayenne, lemon juice, and soy sauce.

    Slice the chicken into about 24 parts and let them sit in the marinade for 30 minutes.

    Meanwhile, prepare the peanut sauce and preheat the grill.

    Peanut sauce:

    In a small saucepan, put the coconut milk, red pepper flakes, caraway, ginger, coriander, garlic, and salt and place them over the cooker until they boil.

    Once they do, take the saucepan off the heat and let it chill for 15 minutes.

    Add the peanut butter into the coconut milk mixture and put back over the heat, and let simmer until the sauce thickens, over medium-low heat.

    Transfer into a serving bowl and keep it aside.

    Grilling:

    Soak 6 to 10 wooden skewers (this depends on how full you want your skewers to be) for 30 minutes.

    Prepare your grill for direct cooking and set it on high heat.

    Put the chicken onto the skewers and sprinkle with black pepper and some salt (if wanted)

    Place the skewers over the grill and cook for 2 to 3 minutes per side.

    Serve with the peanut sauce as a dip
