Ingredients
- 1 skinless Skate wing
- 1 teaspoon Bonedust seasoning
- 4 tablespoons Butter
- 1/4 cup diced Shallots
- 1/4 cup Capers
- 1 teaspoon grated Lemon zest
- 1 tablespoon fresh Lemon zest
- 4 tablespoons aged Balsamic vinegar
- Salt
- Black pepper
Directions

Skate wing has a distinct mild, sweet taste and a succulent flavor, and it goes very well with our Mediterranean-inspired Balsamic sauce.

Steps
1 Done | Preheat the grill to 500°F. |
2 Done | Rince the skate wing under cold water, then pat it dry. |
3 Done | Season the skate wing with the Bonedust seasoning, then spry it on both sides with a nonstick cooking spray. |
4 Done | Place the fish on a grill topper and grill for 2 to 3 minutes per side. |
5 Done | Reduce the temperature to 300 degrees F, close the grill lid, and let the skate cook for 10 more minutes. |
6 Done | In a small saucepan, melt 2 tablespoons of butter over medium heat. Add the shallots and capers and saute for 3 minutes. |
7 Done | Add the lemon zest, lemon juice, and vinegar and bring to a boil. Continue to boil until the liquid has reduced and thickened. |
8 Done | Remove the sauce from the heat and stir in 2 tablespoons of butter to emulsify it, and season with salt and pepper to taste. |
9 Done | When the skate is ready, take it off the grill. |
10 Done | Cut the flesh by slicing from the thickest part of the fish to the tip of the wing. |
11 Done | Serve the fish with a warm balsamic sauce. |
