Steps
1 Done | Peel and cut the cucumbers in half lengthwise. |
2 Done | Use a small spoon or a melon baller to scoop out the seeds and watery center from each half to form a shallow groove down the center. |
3 Done | Use a sharp paring knife to slice the cucumbers crosswise as thin as possible, ideally about 1 ⁄8 inch thick. |
4 Done | Put the cucumbers in a colander and sprinkle with salt. |
5 Done | Ensure that your hands are clean, and toss the mixture to combine the cucumbers with the salt. |
6 Done | Set the colander over a bowl and let it refrigerate for at least 1 to 2 hours. |
7 Done | Squeeze handfuls of cucumber slices with your hands to release any excess liquid and transfer the cucumbers to a medium nonreactive bowl. |
8 Done | In another medium nonreactive bowl, combine the white vinegar, cider vinegar, and sugar and stir until the sugar has completely dissolved. |
9 Done | Pour the vinegar mixture over the cucumbers, add the chopped chives, and stir to combine thoroughly. |
10 Done | Serve immediately, or refrigerate for later. |
