1 sliced Garlic cloves
2 teaspoons Asian chile pepper sauce such as sambal oelek
1.5 tablespoons Maple syrup
2 tablespoons Soy sauce
2 tablespoons Mayonnaise
3 tablespoons Rice vinegar salt
freshly Ground black pepper
2 pounds skinless and boneless Chicken thighs
1 Lime cut into 8 wedges

    First, use a mortar and pestle to mash garlic into a paste.

    Mix the garlic paste with rice vinegar, mayonnaise, soy sauce, maple syrup, and chile pepper sauce until the marinade is everything is well combined.

    Put the chicken thighs in a big flat container, for example, a baking dish.

    Pour over the marinade on the chicken, then stir until all sides are coated well.

    Use plastic wrap to cover the dish and let it sit for 3 hours.

    Meanwhile, Preheat the charcoal grill to high heat the put on the chicken thighs on the grill, and don’t forget to flip sides.

    Cook for 3 minutes. When grill marks appear, flip the chicken over and cook for another 5 minutes.

    Keep on cooking for 10-12 minutes longer while moving them sometimes and flipping over after every 2 minutes; when they turn golden brown, and there is no pink color, your chicken thighs are then ready to be served.
