4 Double-Cut Lamb Chops about 7 oz each
Salt
Freshly Ground pepper
2 sprigs Rosemary
1/2 cup Olive oil

    Rosemary Lamb Chops with Olive Butter and baguette, tomato salad, green salad with mustard with vinaigrette and grilled potatoes as side dishes. Absolutely to serve with red wine.

    Steps

    Rinse lamb chops, pat dry and pound somewhat flat.

    Season meat with salt and pepper.

    Rinse rosemary and shake dry.

    Strip off needles and chop finely.

    Combine rosemary and oil.

    Brush chops with 5 tbs marinade and marinate in the refrigerator for 2 hours. Prepare olive butter.

    Grill lamp chops for 5 minutes on each side, turning occasionally and brushing with remaining oil. Slice olive butter and arrange on top of meat.

    *Olive butter

    Combine 3 oz chopped black olives, 4 oz softened butter, salt, pepper, 2 pinches grated lemon zest and 2 garlic cloves squeezed through a press.

    Roll up tightly in plastic wrap and cover the plastic in foil before refrigerating or freezing.
