Roasted turkey panini with pesto, fontina and roasted peppers

    Sandwiches always come in handy as a quick lunch or dinner idea when you don’t have the energy to cook. If you want to use your leftover turkey in the fridge, this is the perfect opportunity for you; all you need is some bread and few ingredients; it is so simple, LITERALLY.

    Put the slices of bread on a flat work surface divide pesto evenly among them with a spoon.

    Spread the pesto over the bread.

    Divide the turkey, roasted pepper strips, and fontina equally among 4 bread slices. Top with the remaining 4 slices of bread, pesto side down, to form 4 sandwiches

    Lightly drizzle some of the olive oil on the outside of each sandwich.

    Preheat a grill to medium-high or heat a large grill pan over medium-high heat.

    Place the sandwiches on the grill and cook them for 4 minutes. Press them occasionally with a large metal spatula or the bottom of a small heavy saucepan until the bread is golden brown and the cheese has melted.

    Transfer the sandwiches to a cutting board, slice them in half on the diagonal, and serve immediately.
