Ingredients

Adjust Servings:
2 tablespoons Olive oil
1 Yellow onion cored and julienned
20 Red jalapeno peppers stems removed, sliced into 1/8 inch (3 mm) rings, with seeds
2 cups diced fresh Pineapple
2 teaspoons Coriander seeds toasted and coarsely ground
1.5 cups White vinegar
1 cup White sugar
kosher salt Kosher salt

    This is the best topping that you can make at home. This recipe works great as a burger topping.

    This is a perfect condiment to give your burgers a little kick; we feel the heat is at a perfect level, but feel free to substitute Serrano or habanero chiles if you want it even hotter.

    Red hots can be kept refrigerated for up to 1 week.

    Combine the olive oil, onion, and jalapenos in a large saucepan over medium heat, while occa-sionally stirring, for 10 or 15 minutes, until the vegetables start to brown.

    Stir in the pineapple, coriander, vinegar, sugar, and salt, then increase the heat to medium-high.

    Simmer for 10 to 15 minutes, occasionally stirring, until the mixture is the consistency of warm jelly.

    Adjust the heat if necessary to avoid burning.

    Cool to room temperature, then cover it and refrigerate it until needed.
