Ingredients

Adjust Servings:
8 ounces Chorizo casings removed, cut into 1- inch pieces
11/2 pounds Ground pork
1 tablespoon minced Garlic
2 teaspoons Worcestershire sauce
1/2 teaspoons Creole Seasoning
3/4 teaspoon Salt
1/4 teaspoon Cayenne pepper
4 large Hamburger buns or four 6- inch lengths French bread, split in half horizontally
1 cup coarsely grated Pepper jack cheese
1 cup good- quality Mayonnaise for Green Chile Mayo :
1 teaspoon minced Garlic
1 poblano chile roasted, peeled, and seeded
1 tablespoon Lime juice
Salt
Ground black pepper

PORK AND CHORIZO BURGERS WITH GREEN CHILE MAYO

    The unique thing about these burgers is the balance between ground pork and chorizo. The spicy state mixed with the sweet, smoky flavor of the grilled pork brings the best out of these burgers. The smell is one of a kind, too; you won’t be able to resist it.

    Steps

    Preheat a grill to medium-high.

    In a food processor, place the chorizo and process until it is finely chopped.

    Transfer the chorizo to a large bowl and add the ground pork, garlic, Worcestershire, cereal seasoning, salt, and cayenne.

    Mix gently but thoroughly; try not to overwork the mixture.

    Form the mixture into four 1- inch- thick patties and place them on the grill.

    Cook each side for 5 to 7 minutes to a minimum internal temperature of 160°F. During the last 2 minutes of grilling, toast the buns, and if you want, sprinkle the cheese over the tops of the burgers and cook until it's melted.

    Place the burgers on the bun bottoms and set them on plates.

    Generously top each burger with 2 tablespoons of the Green Chile Mayo, then place the top of the buns over sauce.

    Now combine the mayonnaise, garlic, poblano, and lime juice in a food processor and process until smooth.

    Season to taste with salt and pepper
