Set your instant pot mode on sauté mode.
Pour vegetable oil and switch on the heat to medium.
Place shallot and ginger and gently mix them and cook for 4 minutes.
Pour cardamom, peppers and cinnamon and mix. Let cook for 3 minutes
Add apples, sugar, raisins and mangoes and mix.
Add ginger and shallot, stir gently and cook for a time of 5 minutes.
Add cinnamon, hot peppers and cardamom, stir gently and cook for 2 minutes.
Add mangoes, apples, raisins, sugar and vinegar.
Stir and let cook for 3 minutes then add salt.
