- 1.5 lbs Flank Steak
- 1 tablespoon Olive oil
- 1/4 cup chopped fresh Coriander
- 6 peeled Garlic cloves
- 1 tablespoon of dried Oregano
- 1/2 tablespoon Ground pepper
- 1/2 tablespoon ground Cumin
- 4 canned chipotle Peppers in adobo sauce
- 2 tablespoons of Vegetable oil
- 1 tablespoon of Honey

Put the cloves of garlic in a dry frying pan and cook them over a medium heat for about 2 to 3 minutes on each side until they take a light brown colour.
Place the chipotle peppers after draining then with the cloves of garlic , oregano, ground pepper, ground cumin , vegetable oil and honey in a food processor and blend then until you get a thick homogeneous paste
Rub the paste you just made all over the steak then place it in a plastic bag or a dish and cover it with plastic wrap then place the meat in the fridge for 8 to 24 hours and Keep turning the steak every few hours while it's marinating to allow the paste to penetrate evenly into the meat.
Preheat your grill to a medium heat and lightly coat it with olive oil
Wipe the steak carefully to get rid of the excess of the paste then salt it evenly
Place the steak on the grill and cook it for 4 to 6 minutes until it takes a nice brown colour on the bottom side .
Flip the steak , make sure to use tongs and be careful not to use a fork because it will peirce the steak and get rid of the delicious juices inside the meat .
Grill your steak on the other side for about 3 to 4 minutes until the steak is rare to medium . If the steak is too rare keep cooking it over indirect or low heat .
Brush the surface of the steak lightly with olive oil and sprinkle on some salt and pepper then let it rest for a few minutes .
Now that your steak us ready slice it ob the diagonal across the grain of the meat and serve it .
For a Mexican style sandwich you can place the steak in a warm corn tortilla and accompany it with grilled peppers , a spicy salsa , sliced avocados and refined black beans .
