Ingredients

Adjust Servings:
1/4 pounds Ground lamb
1/2 cup minced Shallots
3 tablespoons minced fresh Mint leaves
1 tablespoon minced Garlic
1/2 teaspoons Salt
1/2 teaspoon ground Cumin
1/4 teaspoon ground Allspice
1/4 teaspoon Cayenne pepper
1 tablespoon Olive oil
6 Hamburger buns Feta Spread (recipe follows), for serving
leaves of lettuce for garnish
Thinly sliced Tomato for garnish
Sliced roasted Red Peppers
4 ounces crumbled Feta cheese For Feta Spread:
4 ounces Cream cheese at room temperature
1/2 cup Greek yogurt
2 tablespoons minced tops of Green onion
1 tablespoon minced fresh Mint leaves
2 teaspoons freshly squeezed Lemon juice
1/2 teaspoons minced Garlic
1 teaspoon Olive oil
1 teaspoon finely grated Lemon zest
1/2 teaspoon Salt
1/8 teaspoon Cayenne pepper

Lamb burgers with fetta spread

    Combine all the ingredients in a bowl and stir to blend well.

    Cover with plastic wrap and refrigerate for at least 1 hour or up to overnight to allow the flavors to blend.

    Then prepare your burgers:

    Combine the lamb, shallots, mint, garlic, salt, cumin, allspice, cayenne and cinnamon in a large bowl

    Mix gently but thoroughly to combine. Use your hands to shape the mixture into 6 wide patties about 1⁄2 inch thick then transfer them to a large plate.

    Cover with plastic wrap and refrigerate for at least 2 hours or overnight.

    When you are ready to cook the burgers, preheat a grill to medium-high heat.

    Brush both sides of the burgers with the olive oil. When the grill is ready, add the burgers and cook each side for 4 minutes.

    Transfer the burgers to a platter and cover loosely with foil.

    Place the buns, cut them side down on the grill and cook for 1 to 2 minutes until warmed through and lightly toasted.

    Finally, place the burgers on the buns, spoon some of the Feta Spread over each burger. Add lettuce, tomatoes, and sliced roasted peppers if desired, and serve immediately.
