Ingredients

1 Octopus ink sac and eyes removed
4 sprigs of Coriander
1 quartered Lemon
1 small chopped Onion
4 sliced Garlic cloves
1 tablespoon Bonedust seasoning
1 tablespoon Salt
1 tablespoon White sugar
4 minced Garlic cloves
1 tablespoon chopped fresh Coriander
1 tablespoon chopped fresh Oregano
Salt
Coarsly Ground black pepper
1 Lemon juice Juice of 1 lemon
2 tablespoons Extra-virgin olive oil

    Cooking octopus may seem intimidating and hard, but in reality, it is not very hard. It might take more time than your average seafood dish, but all the time and effort put into it is worth it.

    We have for you a foolproof recipe with the perfect mix of the tender and rich octopus, the fresh marinade, and the smoky flavor of grilling.

    In a large stockpot, combine 8 cups of water, coriander sprigs, lemon, sliced garlic, Bonedust seasoning, salt, and sugar then bring it to a boil.

    Add the octopus to the stockpot and wait for it to boil then reduce the heat to medium and let it simmer for 45 to 60 minutes.

    When it is ready, let the octupos cool completely in its cooking liquid, then refrigerate them, covered, overnight.

    An hour befor grilling remove the octopus from the refrigerator, discard the liquid, then remove the purple skin of the octopus using the back of a knife under running water.

    Season the octopus flesh with minced garlic, chopped coriander, oregano, salt, pepper, lemon juice, and olive oil and let marinate for 1 hour.

    After 1 hour preheat the grill to 400 degrees F.

    Grill the octopus for 2 to 3 minutes per side, basting with the marinade, until lightly charred.

    Take the octopus off the grill, cut it into chunks, and serve.
