Ingredients

1 large Red onion cut into ½-inch slices
1/2 cup Extra-virgin olive oil plus more for brushing
Kosher salt
Ground black pepper
2 Green BELL pepper
2 Red bell pepper
1/4 cup Balsamic vinegar
4 Hot Italian sausages or sweet Italian sausages (or a mix)
4 Submarine rolls or hoagie , split
4 jarred pickled Hot chili pepper optional

Grilled sausage, pepper, and onion Sandwiches

    This is a typical Italian-American sandwich. Grilled sausages alongside peppers and onions are delicious and satisfying. The sausage will keep its fat and spicy flavor when grilled. This straightforward recipe will take the sandwich flavor to the next level.

    Heat your grill on a two-stage fire with hot and medium sides.

    Paint the onion slices on both sides with olive oil and sprinkle with salt and pepper. Grill the onion slices over the medium side of the fire, turn them once, till lightly grill-marked and softened (the process takes about 10 minutes). In the meantime, grill the peppers on the hot side; flip them occasionally, till blistered and charred all over (that takes about 10 minutes). Remove the peppers and onions to a cutting board and set them aside to cool.

    Scatter the onion slices into quarters and put them in a medium bowl. Skin the peppers (you can leave some of the charred skin attached). Remove and get rid of the seeds, cores, and ribs. The next step is to scatter the peppers into long strips (about ½-inch-wide). Toss them in the bowl with the onions. Add vinegar and oil, and sprinkle with salt and pepper. Toss well.

    On the hot side of the grill: cook the sausages, turn them frequently, till they become cooked through and browned all over (the process takes about 8 minutes).

    PS: If you notice that the sausages are getting brown too quickly, transfer them to the medium side of the grill.

    In the meantime, paint the cut-sides of the rolls with olive oil and grill till browned (place on the medium side of the grill, and it should take about 5 minutes).

    Optional: on the medium side of the grill, you can place the hot Chile peppers; turn them once, till lightly charred; (it should be around 1 minute).

    Put sausage in each roll, topping with some of the onion and pepper mixture (and Chile pepper if using). Now it's ready to be served.
