Ingredients
- 3 Tbsp Mango Salsa
- Freshly squeezed Lime juice
- 30 g chopped Cilantro
- 1 small Red onionfinely chopped
- 1 Mangocoarsely chopped
- 1 Red bell pepperstemmed, seeded, and finely chopped
- 1/2 tsp Chili powder
- 1/2 tsp Kosher salt
- Dash of hot sauce
- 170 g Salmon fillet
- Extra-virgin olive oilfor brushing

Steps
1 Done | To make the salsa: In a medium bowl, combine the lime juice, cilantro, red onion, mango, bell pepper, chili powder, salt, and hot sauce. |
2 Done | Toss gently and set aside. |
3 Done | Prepare enough coals for a hot charcoal fire, or preheat your gas grill on high for 10 minutes with the lid closed. |
4 Done | Liberally brush the skin side of the fillets with olive oil. |
5 Done | Place the salmon fillets on the grate, skin-side down, and grill for 5 minutes, until the skin is golden brown and a crust has formed. |
6 Done | Brush the top of the fillets again with oil, turn, and grill for 4 to 5 minutes more, until the center is just cooked through. |
7 Done | Transfer the salmon to individual plates, top with the salsa, and serve. |
