- 3 Tbsp Mango Salsa
- Freshly squeezed Lime juice
- 30 g chopped Cilantro
- 1 small Red onionfinely chopped
- 1 Mangocoarsely chopped
- 1 Red bell pepperstemmed, seeded, and finely chopped
- 1/2 tsp Chili powder
- 1/2 tsp Kosher salt
- Dash of hot sauce
- 170 g Salmon fillet
- Extra-virgin olive oilfor brushing

To make the salsa: In a medium bowl, combine the lime juice, cilantro, red onion, mango, bell pepper, chili powder, salt, and hot sauce.
Toss gently and set aside.
Prepare enough coals for a hot charcoal fire, or preheat your gas grill on high for 10 minutes with the lid closed.
Liberally brush the skin side of the fillets with olive oil.
Place the salmon fillets on the grate, skin-side down, and grill for 5 minutes, until the skin is golden brown and a crust has formed.
Brush the top of the fillets again with oil, turn, and grill for 4 to 5 minutes more, until the center is just cooked through.
Transfer the salmon to individual plates, top with the salsa, and serve.
