Ingredients
- 1/2 cups Whole milk
- 1/2 cups Water
- 2 teaspoons Kosher salt
- 1/2 teaspoon freshly Ground white pepper
- 2 cups Yellow cornmeal
- 3 tablespoons Unsalted butter
- 1/2 cup Mascarpone cheese
- 2 tablespoons Unsalted butterat room temperature
- 1/2 cup Olive oil
Directions
Grilled polenta is a good option for a side dish served with grilled meat or fish, or regular chicken wings.
It’s also an excellent vegan option for those who prefer a balanced meal. This recipe can take a while, but the result is oddly satisfying and scrumptious.

Steps
1 Done | In a large saucepan, boil the milk, water, salt, and pepper on low heat. Do not allow the liquid to boil over. |
2 Done | Vigorously whisk in the cornmeal (to avoid lumps). |
3 Done | Reduce the heat to low and cook for 20 minutes while steering with a heat-resistant rubber spatula and make sure to stir along the sides and bottom of the pan, so the polenta does not stick. |
4 Done | Once the mixture is tender, remove the pan from the heat and add in 3 tablespoons of butter and the mascarpone cheese. |
5 Done | Cut two pieces of parchment paper to line a 13 X 9- inch rimmed baking sheet. |
6 Done | Put one piece of parchment on the sheet and brush 1 tablespoon of butter over it. |
7 Done | Pour the polenta onto the buttered parchment and spread the polenta into a smooth, even layer. Then brush the other piece of parchment with the remaining 1 tablespoon butter. |
8 Done | Refrigerate until firm for at least 2 hours or up to 2 days in advance. |
9 Done | Preheat a grill to medium-high. |
10 Done | Trim the polenta by cutting off about 1 inch on each side to form straight edges, and cut it into 6 squares. |
11 Done | Halve each square to form 2 triangles. |
12 Done | Clean the grill and oil it with some olive oil. |
13 Done | Brush the top with olive oil, and place the polenta, oiled side down on the grill. |
14 Done | Wait for 3 minutes and rotate the polenta 90 degrees to make grill crosshatch marks. |
15 Done | Cook for 3 more minutes, then turn the polenta squares over and repeat. Keep cooking until they are nicely browned and crisp. |
16 Done | Serve while hot and enjoy! |
