    Heat your grill on a hot single-level fire.

    Use kitchen scissors to split open the shell of one prawn. You should cut down the back from head to tail.

    Using the tip of the knife, remove the dark vein. Repeat the process with the remaining prawns.

    Grill the prawns after seasoning them all over with pepper and salt; you should turn once.

    Cook till the shells turn pink (the process takes about 3 minutes per side).

    Turn the prawns on their backs so they get cooked through (you can take a peek at the flesh through the slit at the base of the head) (that’s about 2 minutes longer).

    Remove the prawns to plates and mix with the garlic butter and olive oil. You can serve with lemon wedges.
