3/4 Teaspoon Black pepper
1.5 Cups Butter
3 Tablespoons Olive oil
2.5 Tablespoons Balsamic vinegar
3/4 Teaspoon Dried Oregano
9 Tablespoons Soy Marinade
1 Pound Mushrooms Any Variety

Grilled Marinated Mushrooms

    Mushrooms are said to be the key to eternal life. They're said to stimulate and heighten our senses, and they're said to have superhuman abilities. In ancient Egypt, mushrooms were considered regal food, and commoners were forbidden from eating them. We believe the pharaohs were high on psychedelics in Alabama. However, we can all agree on one thing: those suckers are great to eat.

    Mushrooms are one of the few foods that pair well with meat. Everything from steak to salads to satays benefits from their earthy flavors. A marinade of soy, balsamic vinegar, and butter accentuates their innate characteristics as they caramelize on the grill. These grilled snacks go well with any of the dishes in this chapter. Serve with a dash of Mustard Horseradish Sauce on top.

    Melt the butter in a small pot. Combine the remaining marinade ingredients in a small saucepan and heat until just warm. Mix the mushrooms in the hot marinade, toss to coat, and set aside for 1 hour at room temperature.

    For direct grilling, heat a charcoal or wood fire to 400°F.

    Grill the mushrooms on skewers or in a grill basket directly over the embers for 3 to 5 minutes on each side, often basting with the marinade.
