Ingredients
- 1 cup ParsleyFor the Chermoula (African Sauce):
- 1 cup fresh Cilantro
- 1 tablespoon Good paprika
- 3 tablespoon Beef Brothlow-sodium
- 2 tablespoon Lime juice
- 1 tablespoon Olive oil
- 1 teaspoon Cumin
- 1/2 teaspoon ground Coriander
- 1/4 teaspoon Salt
- 1/4 teaspoon Red pepper flakes
- 2 peeled Garlic cloves
- 1.5 pounds fat trimmed off Flank SteakFor the steak:
- 1/4 teaspoon Salt
- 1/4 teaspoon Pepper
Directions
Marinated and grilled flank steak is a simple yet insanely flavorful way to prepare a flank steak. The African sauce marinade is mouthwatering. It is great to grill on a summer evening served with a bright summer salad or rice bowls.

Steps
1 Done | Prepare the sauce:Combine all the sauce ingredients in a blender or food processor and process until chopped very fine. Set aside. |
2 Done | Prepare the steak:Sprinkle the steak surface with salt and pepper. Heat a cast-iron griddle or skillet to high (when a drop of water skates across the top surface) and lightly spray with oil. |
3 Done | Place the steak on the surface and cook for 4 minutes, or until meat releases from the pan, turn and cook for 4 minutes on the other side. The meat will produce red beads on the surface when it is medium-rare. |
4 Done | Remove from the pan at this point or cook until desired doneness. |
5 Done | Transfer the steak to a cutting board and let it rest for 5 minutes; cut on the diagonal across the grain to maintain tenderness. |
6 Done | Serve with the delicious African sauce. |
