Ingredients

Adjust Servings:
1 cup Parsley For the Chermoula (African Sauce):
1 cup fresh Cilantro
1 tablespoon Good paprika
3 tablespoon Beef Broth low-sodium
2 tablespoon Lime juice
1 tablespoon Olive oil
1 teaspoon Cumin
1/2 teaspoon ground Coriander
1/4 teaspoon Salt
1/4 teaspoon Red pepper flakes
2 peeled Garlic cloves
1.5 pounds fat trimmed off Flank Steak For the steak:
1/4 teaspoon Salt
1/4 teaspoon Pepper

    Marinated and grilled flank steak is a simple yet insanely flavorful way to prepare a flank steak. The African sauce marinade is mouthwatering. It is great to grill on a summer evening served with a bright summer salad or rice bowls.

    Prepare the sauce:

    Combine all the sauce ingredients in a blender or food processor and process until chopped very fine. Set aside.

    Prepare the steak:

    Sprinkle the steak surface with salt and pepper. Heat a cast-iron griddle or skillet to high (when a drop of water skates across the top surface) and lightly spray with oil.

    Place the steak on the surface and cook for 4 minutes, or until meat releases from the pan, turn and cook for 4 minutes on the other side. The meat will produce red beads on the surface when it is medium-rare.

    Remove from the pan at this point or cook until desired doneness.

    Transfer the steak to a cutting board and let it rest for 5 minutes; cut on the diagonal across the grain to maintain tenderness.
