Ingredients

Adjust Servings:
3 whole pieces of Fennel (keep the leaves for decoration)
250 g of Ricotta cheese
8 g of grated Parmigiano cheese
2 tablespoons of Olive oil
30 g of sliced Mint leaves
50 g of minced Parsley
1 Lemon
1 tablespoon of thinly cut Chives
Some minced fresh Thyme
Ground black pepper
Salt

    Combine the ricotta, the Parmigiano, the green ingredients, black pepper, and salt.

    Add half of the juice and the zest of the lemon.

    Put the sauce in the refrigerator for as long as you can (hours).

    Cut the fennels into halves and get rid of the exterior layer. Keep the leaves for later.

    Take each half and divide it into four equal parts and keep them as they are.

    Grill on each side for 5 minutes. They should be squishy but embritted.

    Once done, add the other half of the lemon juice.

    Divide the quantity into 4 servings, sprinkle the plates with fennel leaves, and serve with the sauce.
