Remove the fat and excess skin of the chicken quarter, and rub the olive oil on the remaining skin of each quarter.
Season the quarters with the dry rub.
For an average of 3 hours, wrap the chicken quarters and place them in the refrigerate for the flavors to be absorbed.
Preheat your pellet to 325°F, and place the chicken quarters on the grill to cook for one hour.
Increase the temperature during the last few minutes to make the skins crispy.
Make sure that the thickest parts of the chicken are well cooked.
Let the grilled crispy chicken quarters rest for about 15 min before serving.
