Steps
1 Done | Remove the fat and excess skin of the chicken quarter, and rub the olive oil on the remaining skin of each quarter. |
2 Done | Season the quarters with the dry rub. |
3 Done | For an average of 3 hours, wrap the chicken quarters and place them in the refrigerate for the flavors to be absorbed. |
4 Done | Preheat your pellet to 325°F, and place the chicken quarters on the grill to cook for one hour. |
5 Done | Increase the temperature during the last few minutes to make the skins crispy. |
6 Done | Make sure that the thickest parts of the chicken are well cooked. |
7 Done | Let the grilled crispy chicken quarters rest for about 15 min before serving. |
