- 1 Chicken cuts
- 500 g of small Heirloom tomatoes
- 1 minced Garlic cloves
- 1 sliced small Red onion
- 2 fresh Rosemary leaves
- 3 tablespoons of Olive oil
- 12 fresh Basil
- 12 fresh Mint leaves
- 6 fresh Thyme
- Sea salt
- Ground black pepper

Dry the chicken pieces using kitchen paper.
Sprinkle them with salt and black pepper.
Heat a cast-iron grill and brush with olive oil.
Grill the chicken skin side down over medium heat.
Cook on all sides of the legs and thighs for 30 minutes and cut up breasts for 20 minutes.
Dice the tomatoes.
Mix the herbs, minced garlic, olive oil, onion, and tomatoes, and season with salt and pepper.
Add the mixture to the tomatoes and grill them on one side until grilling marks show up.
Put the chicken and the herbed tomatoes on a flat plate and serve hot.
