Ingredients

1 recipe Cilantro Dressing
8 ounces beef Flank Steak
2 small Yellow Peppers and/or red sweet peppers, seeded and cut in halves
1 ear of fresh Sweet corn husked and grated.
2 chopped Green onion
Vegetable oil
2 cups Arugula or mixed vegetables
4 halved Cherry tomatoes

    Make the Cilantro dressing and reserve half of it.

    Trim the fat from steak.

    Carve diamond shapes on both sides of the steak by making diagonal cuts at 1-inch intervals.

    Place steak in a sealable plastic bag and set it in a dish.

    Pour half of the cilantro dressing over steak; seal bag.

    Then coat the steak and set the remaining dressing portion aside.

    Marinate in the refrigerator for 30 minutes.

    Brush the peppers and onions with oil lightly.

    Grilling time: On a charcoal or gas grill, place your steak and corn over the grilling rack over medium heat.

    Cover and let it grill for 17 to 21 min until corn is tender.

    Tip: Turn the steak only once. However, the corn should be flipped occasionally.

    Add the pepper halves to the grill at the last 8 minutes of grilling and green onions the last 4 minutes, also turning them frequently.

    Let steak chill for 5 minutes before cutting.

    Cut the steak into thin slices and the rest of the vegetables roughly.

    Split the arugula between two bowls.

    Place some of the steak slices and grilled vegetables in each, then drizzle them with the rest of the cilantro dressing.

    Cilantro dressing:

    In a food processor, mix 3 tablespoons of lime juice, 2 tablespoons chopped onions, 2 tablespoons fresh cilantro, 1 tablespoon oil, 1 tablespoon water, 2 teaspoons honey, 1 large clove garlic, peeled and quartered, ¼ teaspoon salt, and ¼ teaspoon cumin. 

    Cover and blend until fully mixed.
