Ingredients

Adjust Servings:
1 pound Chinese eggplant or Japanese eggplant
1/4 cup Olive oil
2 tablespoons of Vodka
2 tablespoons of Hoisin sauce
1 medium Tomato cored and properly chopped
1 tablespoon of minced Gingerroot
1 tablespoon of chopped fresh Cilantro leaves
1 Garlic cloves minced
2 tablespoons of Balsamic vinegar
for painting grill screen Oil

    Heat your grill. Cut eggplants lengthwise in ³⁄8-inch thick slices not through but all the way to stem ends.

    Start with mixing 2 tablespoons of olive oil with vodka and Hoisin sauce on a deep-sided plate. Fan eggplant slices, and you should turn them in the sauce until fully coated. Put away for about 10 minutes.

    In the meantime, blend tomato, ginger, garlic, cilantro, balsamic vinegar, and the remaining 2 tablespoons olive oil in a small bowl.

    Place the grill screen on the grill and paint it with oil. Add fanned-out eggplant on the grill screen, cover, and cook it to become tender (around 3 to 4 minutes per side).
