Ingredients

Adjust Servings:
1/2 cups finely chopped Onion
1 tablespoon grated Lemon zest
1/4 cup freshly squeezed Lemon juice
1/4 cup chopped fresh Parsley
1/4 cup chopped fresh Cilantro
3 tablespoons chopped fresh Mint leaves
2 teaspoons Salt
1 teaspoon ground Cumin
1 teaspoon Sweet paprika
1 teaspoon freshly Ground black pepper
1/4 cup Olive oil
2 pounds Boneless leg of lamb or shoulder, cut into 1- inch cubes
8 Bamboo skewers
8 warmed Pita breads

    If you are looking for something special to try out on the barbecue, these grilled lamb kebabs are the best option.

    Marinated in a delicious, finger-licking mix of olive oil, cumin, lemon, and garlic, they are so minimal and easy to make.

    To serve, you can stick to the Greek style and add Greek salad as a side dish. Such a wonderful and creative idea to spice things up during summer BBQ evenings.

    Combine the onion, lemon zest, lemon juice, parsley, cilantro, mint, salt, cumin, paprika, pepper, and olive oil in a large bowl and stir well.

    Add the lamb and mix well to let the marinade soak inside.

    Cover with plastic wrap and refrigerate for 2 to 4 hours.

    Put the skewers in warm water for about 1 hour before assembling the kebabs.

    Meanwhile, preheat a grill to high temperature and oil the grate.

    Thread the lamb onto the soaked skewers, place them on the grill. Cook for 10 to 15 minutes while frequently turning to promote even browning.

    Wrap the pita bread around the meat on a skewer and while holding the bread firmly around the meat, twist the skewer out of the meat.

    Add Feta Spread on top of the meat. Repeat with the remaining pitas and skewers
