- 1 cup Garlic clovespeeled
- 1 sprig fresh Thyme
- 1 cup Olive oil
- 1 cup Vegetable oil
Like tomato confit, garlic confit consists of roasting garlic in generous amounts of olive oil at low heats until it’s tender.

In a small saucepan, place the garlic, thyme, and both oils.
Cover and bake for 45 minutes to 1 hour until the garlic is golden brown and tender.
Remove from the oven. When the cloves are cool enough to handle, squeeze the garlic from the skins into a bowl. Then cover and reserve.
Pour any remaining oil into a separate bowl and save for brushing on burgers or steaks before grilling or use in vinaigrettes.
