- 1 tablespoon finely sliced Crystallized ginger
- 1 tablespoon Coarse sugar
- 1 Lime
- 2 medium Peaches
- 1/4 cup White sugar
- 1/4 cup Water
- 1 inch piece fresh Ginger
- 1/3 cup Lime juice
- 1/2 cup Tequila
- 1/3 cup Cointreauor Triple Sec
- 2.5 cups Ice

Combine 1 tablespoon of sugar and crystallized ginger.
Cut a thick slice of lime and rub it around rims of 5 or 6 glasses.
Dip rims into the sugar mixture to coat and set glasses aside.
For the ginger syrup combine ¼ cup sugar, ¼ cup water, and one 1-inch piece fresh ginger, cut into thin slices.
Boil the mixture while stirring constantly until the sugar has dissolved for about 5 minutes. Remove from heat and let cool
Blend peaches, Ginger Syrup, Tequila, Cointreau, and lime juice until smooth.
Gradually add ice, blending until smooth and pour into coated glasses.
