Crumbled Eggs with Grilled Vegetables

    These eggs are not smashed nor scrambled. They are cooked inasmuch as you can still distinguish between egg yolks and whites. We prefer to call them crumbled eggs.

    Serving them with grilled zucchini and peas makes a healthy and protein-rich meal.

    Trim the zucchini and cut it into long thin slices, preferably using a mandoline slicer. Dry them with kitchen paper.

    Fry the bacon lightly with a small amount of butter in a cast-iron skillet over medium heat for 5 minutes, until crispy and browned.

    Clean the skillet and grease with oil.

    Grill the zucchini ribbons and peas until the zucchini is charred. Flip the zucchini and cook for a few minutes.

    Push the vegetables around, add some oil, and break the eggs into the skillet. When they start to cook, break them using a kitchen turner and cook according to your preference.

    Place into a plate, sprinkle pepper and salt, and garnish with the sautéed sliced bacon.
