Chuck short ribs can be served alongside a glass of wine, and are easy to prepare, especially if you follow our straightforward guideline.

With this recipe, you shouldn’t think twice about what to make for your guests. In fact, it is enough to serve four people.

Remove the fat cap and any silver skin from the ribs.

Remove the membrane from the bones, using a spoon handle.

Cover the short rib with mustard or olive oil on all sides, then season with the dry rub.

Preheat your grill at 225° F.

If possible, place a meat probe in the thickest part of the meat.

Place the ribs on the grill and let it smoke for about 5 hours at 225°F.

You can increase the temperature to 250°F maximum, to reach a good internal temperature.

Remove from the grill after 5 hours, or more if needed.

Let the ribs rest for 15 minutes before serving.
