For this Bare Naked Brisket recipe, we will use a fantastic seasoning paste to add more flavor to the beef. The paste will adhere to the brisket nicely during the smoking process to give it a great taste.
The best thing about this recipe is that you do not need foil. Cooking in foil can dilute the barbecue flavors put into your meat. It washes away the smoke flavor and natural caramelization of barbecue.
This foil-free recipe is simple and straightforward, but it will take about 8 hours or a bit more, so plan ahead.

Steps
1 Done | Build a fire for indirect cooking. |
2 Done | In a small bowl, mix all the seasoning paste ingredients. |
3 Done | Coat the entire brisket with the paste. |
4 Done | Place the brisket on the void side of the grill and close the lid. Let it cook for at least 8 hours at 225°F |
5 Done | Once cooked, transfer the brisket onto a pan and cover it. |
6 Done | Let the meat covered to rest for 1 hour. |
7 Done | Slice the brisket across the grain before serving. |
