12 single Baby rib lamb chops frenched
1/2 cup Extra-virgin olive oil
2 tablespoons minced Garlic
2 tablespoons minced fresh Rosemary
2 tablespoons minced fresh Mint leaves
1/4 cup freshly squeezed Orange juice
2 teaspoons Creole Seasoning
1 teaspoon Salt
1 teaspoon finely grated Orange zest
1/2 teaspoon freshly Ground black pepper
1/2 cups packed fresh Mint leaves For Mint Pesto:
1/4 cup grated Parmesan cheese
1/2 tablespoons toasted Pine nuts
2 minced Garlic cloves
1/2 cup Extra-virgin olive oil
1/4 teaspoon Salt
1/8 teaspoon freshly Ground black pepper

    Begin by preparing your mint pesto:

    Rinse the mint leaves well and pat dry.

    Place the leaves in a blender and add the cheese, pine nuts, and garlic. Press the leaves down into the base of the blender and cover the blender.

    Turn the blender on low speed, slowly drizzle the olive oil through the feed tube, blend until everything is well combined.

    Season the mint puree with salt and pepper and pulse briefly to combine.

    Prepare your meat:

    Place the lamb chops in a shallow baking dish.

    In a bowl, combine the oil, garlic, rosemary, mint, orange juice, creole seasoning, salt, orange zest, and pepper.

    Pour the marinade over the chops and make sure that each side is well coated.

    Let it sit at room temperature for 1 hour or cover and refrigerate for up to 4 hours.

    Meanwhile, preheat a grill to medium-high heat and grill the lamb chops 2 to 3 minutes per side for medium-rare.
