    Why This Recipe Works. A good marinade — This marinade is super simple, and only involves a couple of pantry staple ingredients.

    Pour in a bowl the chili sauce, fish sauce, sesame oil, grated ginger root, and garlic and mix well together.

    Divide the mixture into two parts, one to marinate the meat and the other half to baste it whilst it is on the barbecue.

    Score the meat and then place it in a shallow dish before then pouring over the marinade you made earlier.

    Turn the meat over to ensure that it is coated in the sauce completely. Then cover the meat and place it in the refrigerator for no less than 3 hours.

    Heat the barbecue up to a high temperature.

    Brush the grill lightly with oil to prevent the meat from sticking to it, and then grill the meat for around 5 minutes on each side to have meat that is medium-rare.

    Brush over some more of the marinade you put to one side. When cooked, let it stand for a few minutes before serving.
