Ingredients:
- 1 large onion, diced
- 2 large carrots cut into bite-size pieces
- 1/2 pound diced lamb
- 2 cups lamb stock
- 3 large potatoes cut into slices
- Oil
- Salt and pepper
Instructions:
- Preheat the oven to 350°F.
- In a large oven-safe pan, add a little oil with the onion and carrots. Cover and cook over low heat for 5 minutes until softened.
- Turn the heat up, add the lamb, and cook for 3 more minutes until the meat browns.
- Add the lamb stock and season with salt and pepper, then bring it to a boil.
- Turn off the heat and arrange the potato slices on top, so they slightly overlap.
- Sprinkle some salt and pepper on top, cover the pan with a lid, and place it in the oven for 1 hour.
- After 1 hour, turn the oven up to 425°F and cook for 30 more minutes uncovered.
Your lamb hotpot is now ready to be served with a side of your favorite veggies.
Spiced Lamb Hotpot recipe:

It takes a little extra effort, but it results in a tasty lamb hotpot.
Ingredients:
- 1 teaspoon cumin seeds
- 6 cardamom pods, lightly crushed
- 2 tablespoons vegetable oil
- 2 large onions sliced into half-moons
- 1 garlic bulb, cloves peeled and left whole
- 8 whole shallots
- 2 large carrots cut into bite-size pieces
- 1 pound diced lamb
- 1 teaspoon ground ginger
- 1 teaspoon cinnamon
- 1/2 teaspoon cayenne pepper
- 1 teaspoon English mustard powder
- 2 and a half tablespoons flour
- Sea salt
- 2 cups chicken or vegetable stock
- 3/4 pound red-skinned potatoes, washed and sliced
- 2 tablespoons melted butter
- A sprinkle of thyme leaves
Instructions:
- Preheat your oven to 335°F.
- Preheat a large ovenproof pan over medium-high heat. Dry roast the cumin seeds and cardamom pods for few minutes, occasionally stirring to prevent burning.
- Pour in the oil and fry the onions for 10 minutes until they are translucent.
- Add the garlic, shallots, and carrots. Stir for a couple of minutes before adding the lamb and stirring.
- Add the ground spices, cayenne, mustard, flour, and a generous pinch of sea salt and black pepper, then stir well before adding the stock and bringing it to a boil.
- Arrange the potato slices on top of the meat, slightly overlapping them. Brush them with melted butter, sprinkle some sea salt and thyme, cover with a lid, and place in the oven for one and a half hours.
- Take the lid off the pan, increase the oven temperature to 430°F, and cook for 30 more minutes until the potatoes are golden brown.

Lamb Hotpot recipe with Lamb Kidneys:
Ingredients:
- 5 tablespoons butter
- 1 pound diced lamb
- 2 lamb kidneys, sliced
- 1 chopped onion
- 1 finely chopped leek
- 2 peeled and diced carrots
- 1 tablespoon flour
- 1 teaspoon Worcestershire sauce
- 2 cups lamb stock
- 1 bay leaf
- 2 large potatoes, sliced
Instructions:
- Preheat your oven to 320°F.
- Season the lamb chunks with salt and pepper.
- Melt 3 tablespoons of butter in a shallow casserole pan and brown the lamb and the kidneys in it in batches. Remove them to a plate.
- Add more butter to the casserole if needed and fry the onion, leek, and carrots for 8 to 10 minutes, until softened and slightly brown.
- Add the flour and cook for a minute before adding the Worcestershire sauce and the lamb stock.
- Return the lamb and kidneys to the pan along with the bay leaf, stir well, and bring to a boil, then remove from the heat and season with salt and pepper to taste.
- Arrange the potato slices on top, creating a pattern. Melt the remaining butter and brush it on top.
- Cover the lamb hotpot with foil. Then place in the oven for 1 and a half hours until the potatoes are cooked.
- Remove the foil and turn the oven up to 375°F for 10 to 15 more minutes until the potatoes are brown.
The rich and delicious lamb hotpot is ready to be served!
Slowcooker Lamb Hotpot recipe:
If you want to make a lamb hotpot but you don’t want to babysit it, this lamb hotpot recipe is for you!
All you need is to prep everything, arrange it in the slow cooker, and let it do its magic.
Ingredients:
- 1 and a half pounds diced lamb
- 3 tablespoons plain flour
- 2 sliced onions
- 2 sliced celery sticks
- 1 cubed carrot
- 3 oz cubed swede
- 2 tablespoons dry sherry
- 1/2 teaspoon English mustard
- 1 large pinch of ground nutmeg
- 3 bay leaves
- 1 teaspoon chopped fresh rosemary
- 1 teaspoon chopped fresh thyme
- 1 and a half cups beef stock
- 3 minced cloves of garlic
- Salt and pepper to taste
- 1 pound potatoes, sliced
- 2 tablespoons melted butter
Instructions:
- Preheat the slow cooker to a high heat setting.
- Coat the lamb with flour, then put it in the slow cooker with the onions, celery, carrots, swede, dry sherry, mustard, nutmeg, bay leaves, rosemary, thyme, garlic, salt, pepper, and beef stock, then combine.
- Cover with potato slices, then drizzle with the melted butter and season with salt and pepper.
- Cover the slow cooker and cook the lamb hotpot on high for 3 to 4 hours.

Chinese-Style Lamb Hotpot recipe:
The following lamb hotpot recipe is far from what we usually think when we talk about lamb hotpot. But it is a flavorful and delicious dish, especially if you like Asian flavors.
Ingredients:
- 3/4 pound lamb
- 1/2 pound Daikon radish
- 1/2 onion
- 1 and a half oz Cellophane noodles
- 1 teaspoon cumin seeds
- Green onion for garnish
- For the “A” seasoning
- 1 teaspoon Shio-Koji
- 1 teaspoon cooking sake
- For the “B” seasoning
- 2 tablespoons ketchup
- 5 teaspoons soy sauce
- 1 tablespoon cooking sake
- 1 teaspoon sugar
- 1 cup water
Instructions:
- Mix the “A” seasoning with the lamb and let marinate for 1 hour.
- Dry-roast the cumin in a frying pan. Once it starts to crackle, remove it from the pan.
- Without greasing the pan, cook the marinated lamb meat until well done. When the meat starts to sizzle, add back the cumin and saute together.
- Combine the “B” seasoning in a hot pot and bring to a boil.
- Transfer the browned meat to the hotpot.
- Chop the onions and Daikon radish into chunks and add the hotpot.
- Cover with the lid and let boil for 30 minutes.
- Add the noodles, boil, and it is done. Garnish with the green onions and serve hot.
This recipe may not be your average lamb hotpot recipe, but it is very filling and flavorful, and it sure is a great exotic dish to serve to your family to enjoy together.
