- 1/2 teaspoon cayenne pepper
- Kosher salt and black pepper
- Extra virgin olive oil
- Warm Greek pita bread or buns
- Sliced tomatoes
- Sliced green bell pepper
- Sliced cucumbers
- Sliced red onions
- Pitted olives
- Crumbled feta
- Tzatziki sauce
Instructions:
- Heat an outdoor gas grill on medium.
- In a mixing bowl, add the ground lamb with the grated onions, garlic, fresh herbs, oregano, cumin, paprika, cayenne, salt, and pepper. Add a generous drizzle of olive oil and mix everything until well combined.
- Divide the meat mixture into 8 equal balls and form them into patties. Arrange them in a large tray, cover, and refrigerate until the grill is ready.

- Heat oil and butter in a pan, add the garlic and pepperoncini, and cook until fragrant.

- 3 green chilies, deseeded and finely chopped
- 1 tomato, finely chopped

- 1 teaspoon garam masala
- 1 teaspoon mild chili powder
- 1 teaspoon ground coriander

- 1 teaspoon fine sea salt
- For the raita:
- 1 cucumber, halved and deseeded

- A pinch of garam masala 1/2 pack coriander finely chopped
Instructions:
- Mix all the burger ingredients well with clean hands in a large bowl. Cover and leave in the fridge for 1 hour.
- For the raita, grate the cucumber into a sieve and sprinkle over the salt, then set over the sink for 10 minutes before squeezing out the excess liquid.
- Put the cucumbers in a bowl, add the greek yogurt, garam masala, and chopped coriander, then mix well, cover, and chill.
- Divide the burger mix into 6 even balls, then form them into burger shapes.
- Heat a large nonstick pan on high heat, and drizzle in a bit of oil. Carefully put all the lamb burgers in the pan, then turn the heat down to medium.
- Cook the patties for 4 minutes per side, remove them from the pan, and rest on a plate.
- In the same pan with the excess fat and spices, turn the heat up and toast the buns.
- Spread both top and bottom buns with some mango chutney, add a dollop of raita to the bottom bun, and put the lamb burgers on top. Add sliced tomatoes and coriander leaves before adding the top bun and serving.
