To be labeled as extra virgin, the oil needs to retain the true olive taste, have less than 1% oleic acid, and preserve the natural vitamins and minerals of the olives. It is also not treated with any chemicals or altered by temperature to keep its quality at its highest. While you can cook with extra virgin olive oil since it has a low smoke point, it is better to save the pricey good quality oil for dipping bread, dressings, or dips. Suppose you want to get a good quality oil on a lower budget. In that case, you can get virgin olive oil, next in quality but also unrefined. It retains the purity and taste of the olive. It is a better choice for cooking than the more expensive extra virgin olive oil.
