A chipotle pepper is a dried ripe chili pepper smoked using woodfire. It is used as a seasoning. There are mainly two varieties of chipotle pepper, Morita and larger meco. The latter is commonly found in Mexico, while the former is more common in the U.S. Compared to ancho, they are hotter. But they are less hot than small red chiles.
